π₯ Fluffiest Pancakes (Serves 4–6)
Ingredients:

1 ½ cups (190g) all-purpose flour

2 tbsp sugar

1 tbsp baking powder (yes, a full tablespoon!)

½ tsp salt
-
1 ¼ cups (300ml) milk
-
1 large egg
-
3 tbsp melted butter or neutral oil
-
1 tsp vanilla extract
Instructions:

Mix dry ingredients:
In a bowl, whisk together flour, sugar, baking powder, and salt. -
Mix wet ingredients:
In another bowl or large measuring cup, whisk milk, egg, melted butter (or ghee/oil), and vanilla. -
Combine:
Pour the wet ingredients into the dry and gently fold until just combined. -
Rest:
Let the batter sit for 5–10 minutes. This activates the baking powder for maximum fluff. -
Cook:
Heat a skillet or griddle over medium heat. Add a little butter or oil.
Scoop about ¼ cup of batter per pancake.
Cook 2–3 minutes until bubbles form on top and the edges look set, then flip and cook another 1–2 minutes. -
Serve warm with syrup, whipped cream, or just eat plain!
