πŸ₯ž Fluffiest Pancakes (Serves 4–6)

Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 2 tbsp sugar

  • 1 tbsp baking powder (yes, a full tablespoon!)

  • ½ tsp salt

  • 1 ¼ cups (300ml) milk 

  • 1 large egg 

  • 3 tbsp melted butter or neutral oil 

  • 1 tsp vanilla extract 

Instructions:

  1. Mix dry ingredients:
    In a bowl, whisk together flour, sugar, baking powder, and salt.

  2. Mix wet ingredients:
    In another bowl or large measuring cup, whisk milk, egg, melted butter (or ghee/oil), and vanilla.

  3. Combine:
    Pour the wet ingredients into the dry and gently fold until just combined.

  4. Rest:
    Let the batter sit for 5–10 minutes. This activates the baking powder for maximum fluff.

  5. Cook:
    Heat a  skillet or griddle over medium heat. Add a little butter or oil.
    Scoop about ¼ cup of batter per pancake.
    Cook 2–3 minutes until bubbles form on top and the edges look set, then flip and cook another 1–2 minutes.

  6. Serve warm with syrup, whipped cream, or just eat plain!
